Ingredients:
3 cups arugula
2 oz peppered smoked salmon
(I like the kind from Trader Joe’s)
¼ finely chopped shallots
1 tbsp capers, drained
½ small Haas avocado, sliced
2 tbsp white balsamic sweet onion dressing
Trader Joe’s Everything But the Bagel seasoning

Directions:

Toss the arugula in dressing, making a bed of arugula on a plate or in a shallow bowl.

Break apart the salmon, placing it on the arugula.

Lay out the sliced salmon on the other side, sprinkling the capers and shallots between the salmon and avocado.

Sprinkle seasoning on the avocado.
